Nick's Birthday!
So we explored our redneck side this weekend for Nick's Birthday.
It was my first trip to Bandimere Speedway, and I must say, it was fun!

Sushi Night In Aurora
So Nick and I decided to go out for a little sushi dinner last night. I haven't had it in many years and was convinced I didn't like it, but Nick loves it, so we went. I had heard about a new place not far from where we live from a dart friend of ours. It's called Sushi Katsuya. We ordered California rolls, peppered tuna, spicy albacore, yellow tail sashimi, a baked roll of some kind with mushrooms and then something called the 'Marilyn Mon Roll.' It was the best thing of the night. It had scallops, tuna, avocado, rice, caviar, spicy mayo and sesame seeds. We highly recommend that and the spicy albacore. They were awesome. I can't say I hate sushi anymore.

Dart Update
Just thought I would let you all know that darts are officially over for all of us. Val and I lost in the first round of playoffs. Nick, Ben and Eric all lost in the second round. Sad :( If you're interested in playing steel tip darts in Denver, you can check out the RMDA website.

May Update
Hey All,
Sorry it's been a while...but here's what's been going on.
My mom was in, let's say 'a giving mood,' and tried to get us to take a bunch of stuff out of her garage home with us. Guess what Nick found...oh yeah, the original Rubik's Cube that my parents gave me in 1981. Yes folks, Nick wasn't born until 1982, so he never had one as a kid. He has been playing with the thing non stop since then. He swears he's gonna figure it out. :)
We have been making homemade chips, salsa and guac lately. Thanks to the fryer my mom gave us for Christmas. I think Nick may have put too much of something? I don't remember...but I thought it was good.

Nick has made a new friend...he lives in the giant tree next to our balcony. He has been named 'Jack Wonder.' Ah yes, because of his love for stale wonder bread. He will grab the bread right out of Nick's hand and he definitely hates the cats. After making lunch for my mom on Mother's Day, she sent home a can of stale cashews for him. Spoiled brat...Yikes!
As I said, Nick and I went to my moms to make her lunch for Mother's Day, after we had gone to his moms to make her breakfast. It was a really good idea, they didn't have to do anything and I think they really enjoyed it. We made Nick's mom Stuffed French Toast with Bananas and Walnuts. We made my mom a Sesame-Lime Shrimp Salad.

We didn't do much just went to the new bar across the street for $.99 cent pint night and then to watch Ben and Eric play their last regular season dart match.
Darts: Val and I are on a team called 'Lady and the Tramps' in B league, and No neither Val or I are the Lady. Nick is in A league and Ben & Eric are AA. We have all made playoffs. Crazy huh? So next week, Val and I play the first round of B playoffs on Monday and Nick plays his first round on Tuesday. Then Nick and I fly to Dallas on Wednesday, so we will miss watching the first round of AA playoffs. But don't worry, we planned our vacation so Nick could be back or round 2 the following week.

It Was Bound To Happen
Nick and I went to Old Navy today to take advantage of the 2 for $5 flip flop sale. (Not that I need any more, but that's not the point) Nick found a pair of shorts that he wanted to try on and took them back to the dressing room. He came out to show me how they looked and as Nick and I had a conversation about how cool the shorts were, the middle aged gentleman that was working in the dressing room looked at me and said
"I'll trade you...I can't get my son out of anything but Abercrombie!"
Nick looks like my son???...WTF? I know I'm 7 years older, but damn.

Edge-cellent
I love living in a country where I am constantly amazed by the stuff people invent, and as an avid baker, I LOVE this pan. Why the hell didn't I think of this? All edge brownies...brilliant.

Letter To a Thief
To the asshole(s) who broke into my car a couple of weeks ago...
Thanks for breaking the smallest window (*although most expensive to replace)
Thanks for stealing my stereo, but being courteous enough to not cut the wires. (saved me
$20 on the $200 replacement)
Thanks for leaving your screwdriver...it's exactly what I wanted.
(*but a serious thank you to Nick who spent his time in a junkyard, ripping a window out of another car to save me $215)
